Eat The Rainbow…Sandwich, That is!

From the bottom up there’s:
Coconut yogurt
Pan-fried gochujang (Korean red pepper paste) tofu
Alfalfa sprouts
Purple cabbage
Carrot shreds
Use a yummy whole grain bread to hold in all of the delicious veggies.  Wrap in paper or plastic and you are good to go!  You can accompany with a yogurt snack, and a healthy juice or water.  The kids will not only love the way it looks, but they will love the way it tastes.
